The Aqua Project is the complete fit-out, from base build, of two restaurants on the fifth floor of 240 Regent Street; one Japanese and one Western (Spanish) in cuisine styles. The works comprise of two specially installed kitchens, one in each restaurant, an area of specialist food preparation; Sushi and Rabata area within the Japanese dining experience and a Tapas bar in the Western dining experience, bar and dining areas in each restaurant and back of house staff areas.
There is a major specialist joinery installation (including hung wall panels, bars, serving counters, specialist furniture and a bronze bull), wall and ceiling installation and finishes, a bespoke lighting installation with controls, air-conditioning systems, male and female toilet facilities in each restaurant space and the fit-out of the external balcony dining spaces.
